White Cheddar Pop'ums Style Pretzels

Ingredients

  • 2 cups enriched flour
  • 1/4 cup potato starch
  • 1/4 cup cornmeal
  • 2 tbsp canola oil
  • 1 tsp yeast
  • 1 tbsp sugar
  • 1/2 cup warm water
  • 1/2 cup cheddar cheese powder
  • 1 tbsp buttermilk powder
  • 1 tbsp garlic powder
  • 1 tsp onion powder
  • 1 tsp baking soda
  • 1 tbsp kosher salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine yeast, sugar, and warm water. Let sit for 5 minutes until foamy.
  3. In a large mixing bowl, combine flour, potato starch, cornmeal, cheddar cheese powder, buttermilk powder, garlic powder, and onion powder.
  4. Add the yeast mixture and canola oil to the dry ingredients and mix until a dough forms.
  5. Knead the dough on a floured surface for 5-7 minutes until smooth.
  6. Shape the dough into small balls, about 1 inch in diameter.
  7. Bring a pot of water to a boil and add baking soda.
  8. Boil the dough balls in the water for about 30 seconds then remove and place on a baking sheet.
  9. Sprinkle with kosher salt.
  10. Bake in the preheated oven for 15-20 minutes until golden brown.
  11. Let cool slightly before serving.
