Cheesy Shrimp Grits Casserole

Ingredients

  • 1 cup grits
  • 4 cups chicken broth
  • 1 cup shredded sharp Cheddar cheese
  • 1/2 cup butter
  • 1/2 cup milk
  • 2 eggs, beaten
  • 1 lb shrimp, peeled and deveined
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1/4 tsp garlic powder
  • 1/2 tsp Old Bay Seasoning
  • 1/2 tsp Worcestershire sauce
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat oven to 350°F.
  2. Bring chicken broth to a boil in a large saucepan.
  3. Stir in grits, reduce heat, cover and cook for 10-15 minutes.
  4. Stir in cheese, butter, milk, and eggs.
  5. In a skillet, sauté shrimp, pepper, onion, and celery.
  6. Add garlic powder, Old Bay Seasoning, Worcestershire sauce, salt, and pepper.
  7. Fold shrimp mixture into grits mixture.
  8. Pour into a greased baking dish.
  9. Bake for 1 hour.
  10. Let it rest for 10 minutes before serving.
