Chilli Con Carne

Ingredients
- 1 tbsp oil
- 1 onion, finely chopped
- 1 red pepper, deseeded and sliced
- 2 garlic cloves, crushed
- 1 tsp hot chilli powder
- 1 tsp paprika
- 1 tsp ground cumin
- 500g beef mince
- 400g can chopped tomatoes
- 200ml beef stock
- 400g can kidney beans, drained and rinsed
Instructions
- Heat oil in a large pan and cook onion and pepper until soft.
- Add garlic, chilli powder, paprika, and cumin; cook for 1 min.
- Increase heat, add beef mince, and cook until browned.
- Add tomatoes, stock, and season; simmer for 20 mins.
- Stir in kidney beans and cook for another 10 mins.
