Jalapeno Cheddar Bagels

Ingredients
- 2 1/4 tsp active dry yeast (or 1 packet)
- 1 1/2 cups warm water (110°F)
- 1 tbsp sugar
- 4 cups bread flour
- 1 1/2 tsp salt
- 1 cup shredded cheddar cheese
- 3 jalapenos, deseeded and diced
- 1/4 cup baking soda
- 1 egg, beaten
Instructions
- In a glass measuring cup, combine the warm water, sugar, and yeast. Allow it to sit for 5 minutes to activate the yeast.
- In a large mixing bowl, combine the flour, salt, cheddar cheese, and diced jalapenos.
- Add the yeast mixture to the flour mixture and stir until a dough forms.
- Turn the dough out onto a lightly floured surface and knead for 5 minutes, adding more flour if needed.
- Place the dough in a greased bowl, cover with a towel, and let it rise for 1 hour, or until doubled in size.
- Preheat oven to 400°F and bring a large pot of water to a boil. Once boiling, add the baking soda.
- Divide the dough into 8 equal pieces and roll into balls. Press your thumb through the center of each ball to form a hole.
- Boil each bagel for 1 minute per side. Remove with a slotted spoon and place on a parchment-lined baking sheet.
- Brush each bagel with the beaten egg and sprinkle with additional cheddar cheese, if desired.
- Bake for 20-25 minutes or until golden brown and cooked through.
