Shrimp and Bell Pepper Skillet

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 medium onion, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sliced onion to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
  3. Add the sliced yellow and green bell peppers. Cook for another 5 minutes until the peppers start to soften.
  4. Stir in the diced tomatoes with their juice, and add the paprika. Season with salt and pepper to taste.
  5. Simmer the mixture for 5 minutes to allow the flavors to combine.
  6. Add the shrimp to the skillet, stirring them into the sauce. Cook until the shrimp are pink and cooked through, about 3-4 minutes.
  7. Garnish with chopped fresh parsley before serving.
