Shrimp Creole Skillet

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 onion, thinly sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced onion and cook until soft, about 3-4 minutes.
  3. Add the sliced green and yellow bell peppers and cook for an additional 3 minutes.
  4. Stir in the minced garlic and cook for 1 minute.
  5. Add the diced tomatoes, paprika, cayenne pepper, salt, and black pepper to the skillet.
  6. Stir well and bring the mixture to a simmer.
  7. Add the shrimp to the skillet, spreading them out evenly.
  8. Cook the shrimp until they are pink and opaque, about 4-5 minutes.
  9. Sprinkle the chopped parsley on top before serving.
