Buffalo Popcorn Chicken Salad

Ingredients
- 1 cup popcorn chicken, prepared or store-bought
- 1 cup iceberg lettuce, chopped
- 1/2 cup cherry tomatoes, diced
- 1/2 cup cucumber, diced
- 1/4 cup carrots, julienned
- 1/4 cup radishes, sliced
- 1/4 cup buffalo sauce
- Salt and pepper to taste
- Optional garnish: fresh parsley, chopped
Instructions
- Prepare all your ingredients by chopping the lettuce, dicing the tomatoes and cucumber, julienning the carrots, and slicing the radishes.
- If using frozen popcorn chicken, cook according to package instructions. If using freshly prepared, ensure they are cooked and cooled slightly.
- In a large salad bowl, layer the chopped lettuce as the base.
- Arrange the diced tomatoes, cucumber, julienned carrots, and sliced radishes on top of the lettuce.
- Place the prepared popcorn chicken on the salad.
- Drizzle the buffalo sauce over the chicken and salad evenly.
- Season with salt and pepper to taste.
- Garnish with chopped fresh parsley if desired.
- Serve immediately.
