Authentic Louisiana Red Beans and Rice

Authentic Louisiana Red Beans and Rice

Ingredients

  • 1 pound dry kidney beans
  • 1/4 cup olive oil
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 quarts water
  • 1 tablespoon dried thyme
  • 2 tablespoons dried oregano
  • 2 tablespoons dried basil
  • 1 tablespoon cayenne pepper
  • 1 tablespoon hot sauce
  • 1 pound andouille sausage, sliced
  • 4 bay leaves
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon white pepper
  • 1/2 teaspoon red pepper flakes
  • salt to taste
  • 4 cups water
  • 2 cups long grain white rice

Instructions

  1. Rinse beans, and then soak in a large pot of water overnight.
  2. In a skillet, heat oil over medium heat. Saute onion, bell pepper, and garlic in olive oil until tender. Remove from heat, and set aside.
  3. In a large pot, combine beans, 2 quarts water, thyme, oregano, basil, cayenne pepper, hot sauce, and sausage. Bring to a boil, and then reduce heat to medium. Simmer for 2 1/2 hours.
  4. Stir in 2 cups of water, and rice. Bring to a boil. Reduce heat, and simmer for 20 minutes, or until rice is tender.
  5. When beans are tender, and rice is cooked, remove from heat. Season with black pepper, white pepper, red pepper flakes, and salt.
