Banana Bread Pancakes

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 large ripe banana, mashed
  • 3/4 cup buttermilk
  • 1 large egg
  • 3 tablespoons packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter, melted

Instructions

  1. Whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg together in a bowl.
  2. Mix mashed banana, buttermilk, egg, brown sugar, and vanilla extract together in a separate bowl.
  3. Stir wet ingredients into dry ingredients until just combined.
  4. Stir in melted butter.
  5. Heat a large nonstick skillet over medium heat.
  6. Pour about 1/4 cup batter onto skillet for each pancake.
  7. Cook until bubbles form on the surface, 2 to 3 minutes.
  8. Flip and cook until browned on the other side, 2 to 3 minutes more.
