Pan-Seared Fish with Wild Rice and Green Beans

Ingredients
- 4 fillets of fish (such as trout)
- 2 cups wild rice mix
- 12 ounces fresh green beans, trimmed
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Microgreens for garnish
- Lemon wedges for serving
Instructions
- Rinse the wild rice under cold water. Drain.
- Cook the wild rice according to package instructions, usually around 40-45 minutes, until tender. Set aside.
- Rinse and trim the green beans.
- Bring a pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes until bright green and tender-crisp. Drain and set aside.
- Pat the fish fillets dry with paper towels and season with salt and pepper on both sides.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Place the fish fillets in the skillet, skin side down, and sear for 3-4 minutes until the skin is crispy and the fish is nearly cooked through.
- Flip the fish and cook for another 1-2 minutes until cooked through.
- To serve, divide the wild rice among plates.
- Add a portion of green beans to each plate.
- Place a fish fillet on top of the rice.
- Garnish with microgreens and serve with lemon wedges on the side.
