Vegetable Dumpling Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, julienned
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 cup water
  • 12 dumplings (store-bought or homemade)
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion, julienned carrots, and diced celery. Sauté until the vegetables are softened, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Pour in the vegetable broth and water. Bring to a simmer.
  5. Add the dumplings to the simmering soup and cook according to package instructions or until they are fully cooked.
  6. Season the soup with salt and pepper to taste.
  7. Ladle the soup into bowls and garnish with fresh cilantro leaves.
  8. Serve hot.
