Shrimp Ceviche

Ingredients
- 1 lb shrimp, peeled and deveined
- 1/2 cup lime juice
- 1/2 cup lemon juice
- 1/2 cup orange juice
- 1 red onion, finely chopped
- 1 cucumber, diced
- 1 tomato, diced
- 1/4 cup cilantro, chopped
- 1 jalapeño, finely chopped
- Salt and pepper to taste
- 1 avocado, sliced
- Tostadas or tortilla chips for serving
Instructions
- Chop the shrimp into bite-sized pieces and place in a bowl.
- Add lime juice, lemon juice, and orange juice to the bowl with the shrimp.
- Let the shrimp marinate and 'cook' in the citrus juices in the refrigerator for about 30 minutes until pink and opaque.
- While the shrimp is marinating, finely chop the red onion, cucumber, tomato, cilantro, and jalapeño.
- Remove shrimp from the refrigerator and add the chopped vegetables and cilantro to the bowl.
- Season with salt and pepper to taste and mix well.
- Chill the ceviche in the refrigerator for an additional 10 minutes to allow flavors to meld.
- Slice the avocado.
- Serve the ceviche in cups or on tostadas, garnished with avocado slices.
