Stuffed Bell Pepper Sandwich

Ingredients

  • 1 large red bell pepper
  • 2 tablespoons cream cheese
  • 1/2 avocado, mashed
  • 4 slices deli turkey or ham
  • 2 slices provolone cheese
  • 2 leaves romaine lettuce

Instructions

  1. Cut the bell pepper in half lengthwise and remove the seeds and membranes.
  2. Mash the avocado in a small bowl until smooth.
  3. Spread a tablespoon of cream cheese on the inside of each half of the bell pepper.
  4. Spread the mashed avocado on top of the cream cheese in each bell pepper half.
  5. Fold the deli turkey or ham slices and place them inside each bell pepper half.
  6. Fold the provolone cheese slices and add them on top of the deli meat.
  7. Add a lettuce leaf to each bell pepper half.
  8. Press the halves together gently to form a sandwich.
  9. Serve immediately on a plate.
