Bacon Wrapped Pork and Beef Skewers

Ingredients
- 2-3 tablespoons olive oil
- 2 sprigs fresh rosemary chopped
- 1-2 sprigs fresh thyme chopped
- ¼-½ teaspoon oregano
- ¼ teaspoon salt
- ½ pound ground pork
- ½ pound ground beef*
- ½ teaspoon oregano
- ¼ teaspoon salt (or to taste depends on how salty the bacon or pancetta is)
- 10-15 slices thin slices of bacon or pancetta
Instructions
- In a small bowl mix together olive oil, chopped rosemary, thyme, oregano and salt, set aside.
- In a medium bowl mix together ground pork, ground beef, oregano and salt. Form into the shape of a sausage. Wrap well and tightly with bacon or pancetta. Place skewer down the center. Cook on a pan grill or barbecue until cooked. (low - medium heat). Brush both sides with meat sauce before and after grilling. Serve immediately. Enjoy!
- Your choice of tomatoes, seeded if desired, toss with 2-3 tablespoons of olive oil, 1/4 - 1/2 teaspoon oregano, salt to taste and 5-7 fresh basil leaves chopped, you could also add some chopped celery and or onion, add a little balsamic vinegar if desired.
