Chicken and Broccoli with Yellow Rice

Ingredients

  • 2 cups broccoli florets
  • 1 pound chicken breast, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon vegetable oil
  • 2 cups yellow rice
  • 2 cups water
  • 1 tablespoon butter
  • 1 teaspoon turmeric
  • Salt to taste
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Cut the broccoli into florets and set aside.
  2. Slice the chicken breast into thin pieces.
  3. Mix the soy sauce, oyster sauce, and chicken slices in a bowl.
  4. Add cornstarch slurry by mixing 1 tablespoon cornstarch with 2 tablespoons water and coat the chicken.
  5. Heat 1 tablespoon of vegetable oil in a pan over medium heat.
  6. Add the chicken to the pan and cook until browned and cooked through. Remove from the pan and set aside.
  7. In the same pan, add the broccoli florets and stir-fry until tender-crisp. Remove and set aside.
  8. For the rice, bring 2 cups of water to a boil in a pot.
  9. Add 2 cups of yellow rice, 1 tablespoon butter, 1 teaspoon turmeric, and salt to taste.
  10. Cover and reduce the heat to low, cooking until rice is tender and the water is absorbed.
  11. Mix the cooked chicken and broccoli back into the pan over low heat to combine flavors.
  12. Serve the chicken and broccoli over the yellow rice.
