Beef Stir-Fry with Bell Peppers

Ingredients

  • 1 lb beef, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 tbsp cornstarch
  • 1/4 cup beef broth
  • Salt and pepper to taste
  • 2 scallions, chopped

Instructions

  1. Mix the beef slices with cornstarch, salt, and pepper, and set aside.
  2. Heat 1 tablespoon of vegetable oil in a wok or large pan over medium-high heat.
  3. Add the beef slices to the pan and stir-fry until browned and cooked through, about 3-4 minutes. Remove and set aside.
  4. In the same pan, add the remaining 1 tablespoon of oil.
  5. Add minced garlic and ginger, stir-frying for about 30 seconds until fragrant.
  6. Add the sliced red, yellow, and green bell peppers to the pan.
  7. Stir-fry the peppers for about 4-5 minutes until they are slightly tender but still crisp.
  8. Return the beef to the pan and add soy sauce, oyster sauce, and beef broth.
  9. Stir everything together, letting the sauce thicken slightly.
  10. Add scallions and mix well before removing from heat.
  11. Serve hot, optionally over rice or noodles.
